Banana Almond Smoothie

I came across this recipe (over on this blog) a while back. I’ve recently rediscovered my love for it and thought I’d share. I simply upped it to an entire banana, modifying it from its original kid-friendly half. It’s easy, healthy and perfect for when you’re hungry but don’t have a whole lotta’ time. Just throw the three ingredients into a blender with some ice and voila!

Chili Cornbread Bowls

  If you read this post, you know I’m a huge have of the Bake-a-Bowl pan. The Mr. and I are having fun coming up with creative ideas for desserts and dinners a like. Last night we made chili cornbread bowls. They’re so good and really just so cute. They’re definitely going to be an appetizer the next time we host friends for a BBQ.

For the ultimate easy dinner (remember, I like baking, not cooking), I made the chili in the slow cooker throughout the day and popped my little bowls into the oven wen we were ready to eat. 20 minutes later…voila! We topped them with sharp cheddar cheese and sour cream but you can pile on pretty much anything.

We’re already tossing around a few more ideas of things we can make – both sweet and savory – and let’s just say things got creative and we mentioned everything from corndog bowls to pancake bowls and lots of stuff in between!

P.S. I threw in this photo of the slow cooker liners because they’re a real life saver in the kitchen! While the slow cooker makes cooking easy, it can be difficult to clean…unless you use these, in which case a quick rinse leaves it good as new…You’re welcome.

Lazy Girl’s Guide to Dinner: Chicken Edition

I don’t normally share food/cooking posts on my blog because I’m not exactly what you’d call domestic, and I don’t like cooking. Like, at all. In my mind, kitchens are for baking and making coffee -really the only things I enjoy doing in mine. BUT because the Mr. and I do have to eat, I am always looking for easy (and hopefully healthy-ish) meals to make. I gravitated towards this marinade at Fresh Market – it’s also available at Whole Foods – because of the mango/coconut on the label, and it’s claims to be a glaze/marinade/dip/stir fry/dressing all in one (who doesn’t love a multi-tasker?). Each bottle is about $4.99, and it’s made for the easiest dinner. Ever! Note: Though the bottle also suggests using it as a dressing, I’ve found it’s best used as glaze/marinade.

Just grab a pack of boneless, skinless chicken breasts (Fresh Market often has theirs on sale for $2.99/lb on Tuesdays), pour some of this marinade over it and let it sit in the slow cooker** (4 hours on high if frozen, 2 hours on low if not frozen) and voila! Seriously, that’s it. No salt. No pepper. Nothing. Once the time is up, you have delicious, juicy, flavorful chicken! Add some veggies or sweet potato fries and some brown rice or quinoa to complete the meal.
